US Flat Pattern CAD tool of choice is definitely Unigraphics. Siemens latest release NX12 has some great features like Synchronous modeling which allows parametric manipulation of dumb solids like step and iges.
With NX the right mouse button is your best friend. Right mouse click menus have been really expanded nicely. We liked what they did with NX 10 and NX11 but we love what they did with NX12.
The drafting module in NX12 has a lot of intuition built in. Quick popup menus make drafting a breeze. Catia should take note. NX12 is the king of CAD.
